This coffee showcases the versatility and uniqueness in the cup that we often see from Colombia. This coffee was sourced in partnership with Azahar Coffee Company, who works with Colombia’s best coffees and coffee farmers.

In the cup, expect lemon, caramel and pink grapefruit flavours giving way to a well rounded mouthfeel.

ROASTERS NOTES:
The name “Chachagüi” originates from two indigenous languages, Quillacinga and Quechua. The word roughly translates respectively to “land of clear waters” and “good water”.

This coffee is comprised of the Castillo and Colombia varieties, and was produced by various growers from the municipality of Chachagüí, where the cherries were grown between 1,950 and 2,000 masl.

The temperature at which coffee grows in this region ranges between 18°c and 20°c. Chachagüí’s coffee trees are nurtured by the waters of the Pasto and Juanambú rivers.

The producers carry out the beneficio process, de-pulping the ripest cherries, and then placing them in fermentation tanks for 18 to 24 hours. The drying process takes place on patios and parabolic greenhouse-style dryers. The drying time for each producer varies, but for this blend was around ten days.
